These are nothing gourmet, but I’m going for SIMPLE these days. And if the kids are happy, then it was well worth all the effort I didn’t have to put into it🙂
Here the kids are painting homemade pizza sauce onto a tortilla. We didn’t have any in the pantry so I made up a quick one with Pomi strained tomatoes and Italian Seasoning. I use boxed tomato products because of the high BPA levels in canned tomatoes. It’s best to lay your tortilla on a paper plate, parchment or wax paper so that they slide easily into the pan for frying.
Lily ate all the ingredients as she was making her quesadilla, so when they were done she was already full. Hey, as long as she ate right?
I pre-cooked pepperoni between paper towels in the microwave for 20 seconds to eliminate any excess fat. Yes, I’m one of those people who dab the top of their pizza with napkins! I guess you could skip this step if you really wanted to, but eeewwww!
Make sure to put cheese on first and last so that the tortillas have some “glue” to stick together. Between the cheese layers, add anything the kids like! In this case we used both mozzarella and parmesan, as well as pepperoni and olives.
They only take a couple minutes on each side in some hot oil to brown and crisp up nicely. Serve them up with some fresh fruit and call it a day!
